It comes from the oldest vines, pruned in the form of "glass" and acting "green" to produce few and small clusters looking for the largest exposed leaf area in order to achieve optimal physiological maturation and, above all, polyphenolic which will allow us to extract later the best properties of these 3 varieties chosen. Keeping track of the phenolic ripening, studying the results and assessing other aspects that we consider important: berry size, bunch weight, state of the tannins of the skins and the seeds, we decide if the grapes that will be collected in the campaign are suitable For our Gran Reserva, if it doesn't happen, we don't make this type of wine.
Ageing:
It remains in new oak, American and French, with an average age of 3 years, for 24 months in which they occur, under adequate conditions of humidity and temperature and performing convenient racking, processes and reactions that allow the stability of the components responsible for its future phenolic and aromatic characteristics. Bottle ageing for minimum 4 years before release.
Tasting Note:It is round, silky, delicate, broad but vigorous and robust at the same time.
It emphasizes its harmony in the mouth, it is slightly tannic with a tasty finish, leaves a long, warm and elegant memory.
