Safra is a blend of two relatively unknown and ancient, very ancient grape varieties, Mando and Arcos.

It's made in stainless steel vats, and it's then things get really interesting. The wine is then aged in ancient buried clay amphorae.

Relatively light in body is has these wonderful floral scents and great complexity. Fresh and vibrant red fruits.

Ends lovely and long, and very, very good.

Pablo Calatayud, the man behind Celler del Roure, has taken on a huge and important project, restoring seventeenth century cellars which contain original clay amphorae. How now uses these very same amphorae for both fermentation and aging.

Another of his passionate and important projects is the revival of grape varieties which were and probably still are close to extinction.
